Ingredients
  1. 1/2 lb. - chopped or thinly sliced sorrel leaves
  2. 2 Tbs - thinly sliced leek
  3. 4 Tbs - butter
  4. 1 Tbs - Traditional PepperJam
  5. 2 cups - water
  6. 2 tsp - concentrated stock or broth
  7. 1/4 cup - flour
  8. 2 Tbs - heavy cream
  9. Pepper to taste
Instructions
  1. Sauté the leeks in 1 tablespoon of butter and Traditional PepperJam.
  2. Add the sorrel and cook together for 5 minutes.
  3. Add the stock and cook for another 15 minutes.
  4. Puree the sorrel mixture by pressing it through a sieve.
  5. Melt the remaining butter over low heat, stir in the flour and let cook, without browning, for a few minutes.
  6. Whisk in the sorrel mixture and let the sauce cook gently for 5 more minutes.
  7. Season with pepper.
  8. Add the cream just before serving.
