Bolognese Meat Sauce

Ingredients
  1. 10 oz. - lean ground beef
  2. 7 Tbs - butter
  3. 2 cloves - minced garlic
  4. 1/4 cup - onion, finely chopped
  5. 1 - carrot, finely chopped
  6. 1/4 cup - chopped prosciutto
  7. 1 strip - lemon peel
  8. 1/8 tsp - ground nutmeg
  9. 1 Tbs - tomato puree
  10. 1 + 1/4 cup - water
  11. 1 cup - concentrated stock or broth
  12. 1 Tbs - Traditional PepperJam
  13. 2 Tbs - heavy cream
Instructions
  1. Melt the butter in a heavy saucepan.
  2. Add the onion and carrot and sauté.
  3. Add the ground beef and brown well.
  4. Add the tomato puree, prosciutto, concentrated stock or broth and Traditional PepperJam.
  5. Bring to a boil; reduce heat and simmer for 1 hour.
  6. When sauce has reduced by 1/2, add the lemon peel and nutmeg; slowly stir in the cream.
  7. Serve over pasta.
