Ingredients
  1. 2 lbs. - ripe tomatoes, chopped
  2. 2 Tbs - butter
  3. 1 rib - celery, diced
  4. 1/2 - carrot, diced
  5. 1/2 - med. onion, diced
  6. 1 Tbs - olive oil
  7. 1/2 tsp - salt
  8. 1 Tbs - Traditional PepperJam
Instructions
  1. In a saucepan, melt the butter and cook the celery, carrot and onion in it for 5 minutes, or until soft.
  2. Add the tomatoes, oil, Traditional PepperJam and salt.
  3. Simmer, uncovered, for 30 minutes for until thick and all excess liquid has been evaporated.
